1.Bean-sprouts and Fruit Salad:
Ingredients: 1 cup Bean-sprouts
8 baby tomatoes
2 Oranges
2 slices of Pineapple
1 ripe Mango
6 Apricots
1 Peach
1 Apple
6 Lettuce leaves(shredded)
4 tbsp Olive oil
1 tbsp Balsamic Vinegar
Salt to taste
1/2 tsp Peppercorns(freshly ground)
2 tbsp Fresh orange juice

Method:
Cut the baby tomatoes into two. Peel the oranges, remove the pips and slice them. Cube the pineapple slices. Peel mango and cube them. If apricot is dry then soak in warm water for few hours. Cube apple and peaches. Mix all in a salad bowl. For the dressing- Mix olive oil, balsamic vinegar, salt, freshly ground peppercorns and orange juice. Chill and mix with the fruits and serve.

2.Onion Salad:
Ingredients: 3 thinly sliced Onions
2 tbsp Fresh lemon juice
4 tbsp Dessicated coconut
1/2 tsp Fresh ginger grated
1/2 tsp sugar

Method:
Soak the onion rings in lemon juice for about 1 hour.Add coconut,ginger and sugar.Serve.
