Ingredients:
250g pasta spirals
4-5tbsp olive
4 dry red chillies (sliced thinly and pounded)
2-3 tbsp water
1/2 tbsp finely chopped parsley salt and pepper to season.
Method:
Boil pasta in lots of water with salt and little olive oil until soft. Wash in cold water, drain and set aside. Heat oil in a pan, add garlic and stir-fry until brown. Add pasta and chilli flakes, toss well. Season with salt and pepper and mix well until pasta is well coated. Add water and toss. When the pasta starts sizzling, sprinkle with parsley and mix well. Serve hot.
2.Penne Aglio Olio:
Ingredients:
400g Penne (cooked)
2 tsp olive oil
Red chilli flakes
15-20g green chillies
20g garlic
4 tbsp Parmesan cheese
A few sprigs of parsley Salt to taste
Method:
Boil pasta in lots of water with salt and little olive oil until soft. Wash is cold water, drain and set aside. In a saucepan heat oil. Add chopped garlic, green and red chillies and saute for 2-3 minutes. Sprinkle salt and toss pasta. Serve hot with grated parmesan cheese and parsley sprigs.
3.Macaroni And Cheese:
Ingredients:
750g macaroni
2 cups cheese (grated)
3/4 cup milk
1/2 onion (chopped fine)
a pinch of pepper powder Salt to taste
tbsp butter
For Garnishing:
4 spring onions (sliced)
7-8 mushrooms (sliced and sauted)
Method:
Boil pasta in lots of water with salt and little olive oil until soft. Wash is cold water, drain and set aside. Microwave onion and butter in a casserole on medium high for 3 mins. Stir in the remaining ingredients. Cover with lid and microwave on high for 4 minutes. Cook on low for 5 mins. Garnish with mushroom and spring onions.
4.Cold Pasta Primavera(Pasta Salad):
Ingredients:
400g spaghetti
200g mushrooms (washed and sliced)
200g broccoli (cut into small florets)or cauliflower(blanched in salted water)
100g fresh peas (blanched)
1 large thick leek (cut into thick2 inch pieces and blanched)
10-12 cherry tomatoes
1 large yellow zucchini (sliced into 1 inch pieces and blanched)
1 yellow pepper (finely sliced)
1 large red pepper (finely sliced)
1 large green pepper (finely sliced)
25g fresh basil leaves chopped
100g finely chopped mozzarella cheese or any other cheese of your choice
Dressing:
1/4 cup olive oil
1/4 cup light cream
1 large clove garlic (minced)
2 tbsp white wine vinegar Juice of 1 lime
1/2 tsp freshly ground black pepper
1 tsp sugar
1 tbsp finely minced onion
1 tbsp chopped parsley Salt to taste
50g roughly chopped walnuts to garnish.
Method:
In a bowl, mix all the dressing ingredients. Boil spaghetti in lots of water with salt and little olive oil until soft. Wash in cold water, drain and place in a dish. Combine all ingredients required for the dressing and chill. Pour 1/3 cup dressing over spaghetti and toss well. Put into the fridge to chill for 3 hours before serving. In another bowl put all the vegetables, half the cheese and the basil leaves and pour the remaining dressing over them. Toss well and chill. Just before serving mix all vegetables, spaghetti, remaining basil leaves and cheese. Sprinkle with chopped nuts and serve.
5.Spaghetti Pomodoro:
Ingredients:
300g spaghetti Salt to taste
200g tomatoes
3 spring onions
7-8 cloves of garlic
2-3 green chillies
100g green cabbage
3 tbsp olive oil
1/2 cup water
1 tsp sugar
1/2 cup grated cheese.
Method:
Boil spaghetti in lots of water with salt and little olive oil until soft. Wash in cold water, drain and keep aside. Chop tomatoes, spring onion, garlic, green chillies and green cabbage. Heat oil in a saucepan and fry the chopped garlic and green chillies. After a few minutes, add the chopped spring onions and tomatoes. Add 1/2 cup water to blend the tomatoes. Add 1 tsp sugar and salt to taste. Put in the chopped cabbage and spaghetti. and mix well. Pour it in a serving dish. Sprinkle lots of grated cheese on it and serve hot.
