Noodles In Spinach And Spring Onion:
Ingredients:
250g eggless noodles
2 spring onions
100g spinach
2 tbsp vegetable stock
A pinch of Ajinomoto
4-5 tbsp vegetable oil.
Method:
Boil noodles in salted water with a little oil. Wash with cold water and drain. Chop the spring onions and spinach into 1 inch pieces. Heat oil in a pan saute the spinach and spring onions. Add salt and vegetable stock and continue to cook for 1 minute. Lower the flame and add the cooked noodles and the Ajinomoto. Cook until there is no liquid remaining. Take out in a serving dish and serve immediately.
2.Chinese Potato Rolls
Ingredients:
For the Rolls:
4 medium potatoes (boiled and mashed well)
3 tbsp corn flour
1 green chilli (deseeded and chopped)
2 tbsp coriander (chopped)
3/4 tsp salt
1/2 tsp pepper.
For the Sauce:
1 tbsp oil
6-8 flakes garlic (crushed)
1 green chilli (deseeded and chopped)
2 tbsp tomato ketchup
1 1/2 tbsp Soya sauce
1 tsp red chilli sauce
1/4 tsp pepper
1/4 tsp salt
2 tbsp coriander (chopped)
1 tsp cornflour dissolved in 1/3 cup water.
Method:
1. Mash and mix potatoes with all the ingredients. Wet your hands and shape the mixture into small rolls, of about 1 inch . Flatten the sides. Deep fry in medium hot oil until golden brown. Keep aside.
2. For the sauce:
Heat 1 tbsp oil in a pan and add garlic and green chillies. When the garlic changes colour, mix tomato ketchup, chilli sauce, Soya sauce, salt and pepper. Cook for 1/2 minute.
Add cornflour and coriander. Simmer for a minute till thick. Then add the fried rolls and
Stir for about 1 minute. Serve hot.
Garlic Broccoli
Ingredients:
1 small broccoli (broken into medium florets with long stalks)
2 tbsp oil
8-10 flakes garlic (crushed)
1 green chilli (deseeded and chopped)
1 1/2 tbsp Soya sauce
1 1/2 tsp tomato ketchup
1/3 tsp freshly ground pepper
2 tbsp chopped coriander.
Method:
Boil 2 cups water with 1 tsp salt and 1/2 tsp sugar. Blanch broccoli till it turns a little soft. Strain and keep aside. Heat oil and add garlic and green chillies. When garlic add Soya sauce and tomato sauce. Cook sauces for a few seconds on very low flame. Add coriander, broccoli and pepper. Stir-fry for 5 minutes. Serve hot.
