An Exotic Dinner
4.Lasagne Verdi:
The classic Italian layered dish-flavourful and healthy.
Ingredients:
4 Serves
For The Lasagne Sheets:
3/4 cup plain flour
3 tbsp oil
1/4 tsp salt
1 tsp salt
1 tbsp oil.
For The Spinach Stuffing:
3 cups spinach leaves
1 cup crumbled cottage cheese
1/2 tsp chopped green chillies
A pinch nutmeg powder
3 tbsp cream
Salt to taste.
For The Tomato Sauce:
1/2 tomato puree
1/2 tsp garlic paste
1/2 tsp mixed dried herbs (parsley, celery, oregano)
1/2 tsp chilli powder
1 tsp sugar
1 tbsp cream
1 tsp oil
salt to taste.
For The White Sauce:
1 tbsp butter
1 tbsp plain flour
1 cup milk
salt and pepper to taste./p>
Other Ingredients:
2 tbsp grated cheese
oil for greasing.
Method:
For The Lasagne Sheets:
Combine all the ingredients and knead into a firm dough using a little water if required. Cover with a damp cloth for 15 minutes. Divide into 3 equal portions and thinly roll out each portion into 6inches diameter circle. Take water in a pan, add 1 tsp of salt and 1 tbsp of oil and boil. Cook each sheet for 2 minutes. Drain and transfer the lasagne sheets into a bowl of cold water. Drain again and keep aside.
For The Spinach Stuffing:
Blanch the spinach. Then place in ice-cold water and drain. Chop the blanched spinach finely and mix with the cottage cheese, green chillies, nutmeg powder, cream and salt. Keep aside.
For The Tomato Sauce:
Heat oil in a pan, add the garlic and saute for a few seconds. Add the remaining ingredients and bring the sauce to a boil. Cool and keep aside.
For The White Sauce:
Heat the butter, add the flour and saute for 1 minute. Switch off the flame and slowly pour in the milk, stirring continuously so that no lumps form. Bring to a boil. Add salt and pepper and mix well. Remove from the fire.
How To Proceed:
Grease a 6 inch diameter baking dish. Place one lasagne sheet at the bottom of the baking dish. Top half of the spinach stuffing and half of the tomato sauce. Cover with second sheet of lasagne. Top with the remaining spinach stuffing and tomato sauce and cover with the third sheet. Top with the white sauce and cheese. Bake in a pre-heated oven at 180 degree C (360 degree F) for 20-25 minutes. Serve hot.
