The refrigerator must be defrosted before putting in the ice-cream mixture.
Keep the ice cream mixture in an airtight container for freezing.
The container must touch the base of the freezer.
The quicker the ice-cream sets the better the results.
Lightness in an ice-cream is achieved with air which passes into it, as such the beating must be done thoroughly.
Do not add too much sugar to the ice-cream mixture. The ice-cream will not set well.
Dip the spoon in water to remove liquid glucose from the jar, otherwise it will not come out.
Condensed milk: fresh milk which has been condensed on high flame.
Before beating the cream add soda bicarb. This will prevent the cream from turning into butter.
When ice-cream is semi set, it should be beaten well so that it is light, smooth and fluffy. Then add lightly beaten cream and nuts and return it to the freezer.
2.Custard Coconut Halwa:
Ingredients:
8 1/2 tbsp custard powder (strawberry flavour)
2 cups fresh grated coconut
3/4 cup sugar
2 tbsp raisins
2 tbsp almonds (sliced)
A pinch of salt
1 tbsp ghee
3 cups hot water
Method:
Blend coconut in mixer and strain, through a muslin cloth, to get coconut milk. Mix a little with hot water. Add the sugar, salt, custard powder and place pan on high heat. Keep stirring on a medium flame for about 5 minutes. Add ghee, about half the nuts and raisins. Pour in a tray. Sprinkle remaining nuts and raisins. Cool and cut into pieces and serve.
3.Walnut Raisin Truffles:
Ingredients:
1 can (400g)condensed milk
3 tbsp cocoa powder
2 tbsp butter
1 cup biscuit crumbs
1 cup walnuts chopped raisins.
Method:
Pour the condensed milk in a saucepan and add cocoa powder and butter. Keep stirring and let mixture boil. Remove from the heat and cool. Mix biscuit crumbs, walnuts and raisins. Roll the mixture into 20 walnut-sized balls. Arrange on a serving dish and refrigerate for an hour. Serve cold.
Fun Trifle
Ingredients:
1 sponge cake
3 bananas
1 apple
Strawberry jam
Fruit juice for the custard
2 1/2 cups milk
4 tbsp custard powder
4 tbsp sugar
Method:
Mix custard powder in 1/2 cup of milk. Boil the remaining milk with the sugar in a saucepan and add the custard powder mixture. Cook till thick, remove from fire and allow to cool. Cut the sponge cake horizontally into 2 slices. Apply jam and sandwich both sides. Cut into 1" pieces. Peel and slice bananas and apple and keep aside. Arrange 1 layer of the cake pieces in a glass bowl. Spread fruit on the cake and then pour half the custard on top. Place the second layer of sponge cake and top with the remaining custard. Serve chilled.
