Straight From The Alps
1.Danish Sour Cream Gravy:
Ingredients:
2 tbsp butter
1/2 cup vegetable stock
1/2 cup sour cream
1/2 tsp pepper powder
2 tbsp flour
A pinch of nutmeg powder
Salt to taste.
Method:
Mix flour with seasonings and add to melted butter. Gradually add hot vegetable stock and stir well. Allow to thicken and finally add the cream. Serve hot.
2.Peas Cooked In French Style:
Ingredients:
4 cups green peas (shelled)
1/2 cup butter
2 tbsp vegetable stock
1/2 tsp sugar
A pinch of chilli powder
2 tbsp lettuce (chopped)
1 cup sour cream
Salt to taste.
Method:
Cook all ingredients until the peas are tender. Add lettuce leaves and continue to cook over a medium flame for another minute. Finally add the cream and stir gently. Serve hot.
3.Rosti
Ingredients:
4-5 potatoes (boiled)
3 tbsp butter
1 tbsp vegetable oil
1/2 tsp freshly ground pepper
Salt to taste.
Method:
Peel and mash the potatoes. Heat the oil and melt the butter in a skillet. Mix the mashed potatoes, salt and pepper. With the back of a large spoon press potatoes to make a smooth cake. Cook over a medium flame for 5 minutes or till a crispy brown crust is formed on the bottom. Loosen edges with a spatula. Transfer the potato on the serving plate with the browned side up.
